      Bluefin tuna, prized for its exceptional taste and texture, is a truly valuable catch throughout the world. Due to its unique metabolism, bluefin tuna continue to grow throughout their entire lives, allowing them to reach exceptionally and surprisingly large lengths and weights. Controversy has formed around both the nutritional value, as well as the sustainability of bluefin tuna. Because tuna dwell in cold and deep water, they are exposed to a high level of mercury. In addition, mass fishing has dwindled the population and have consequently caused prices to skyrocket. A 600-lb. bluefin sold for the world-record price of $736,000. Rising costs have led to chefs looking for an alternative, which many believe to be the Kindai.
